My Version - Sweet & SPICY Pork Tenderloin

A good friend of mine pinned this recipe a few weeks back and it looked delish!  Pork tender is a family favorite and we make it with all different seasonings - barbecue, apricot glazed, garlic rubbed, yum!

But I think this will be my new favorite...a mix of sweet and spicy!  Pork tenderloin with a raspberry chipotle glaze...oh yeah it is GOOD!

Here's how to make it:

One Pork Tenderloin (I used a half cause the hubby was working)
1-2 Tablespoons Margarine or Butter
Seasoning of your choice (I use Salt, Pepper, Garlic Powder and Onion Powder)
Raspberry Chipotle Sauce


Preheat your oven to 375 degrees.  Line the pan with foil and put the meat on the pan.  Pour melted butter on the top and moderately season the meat.


Cook for 25 minutes.  After 25 minutes, pour raspberry chipotle sauce on top and put in the oven for 8 more minutes.

Pull out of the oven and let the meat rest for 5 minutes.  Here is the final product...we typically make roasted asparagus to serve along side.


It had just the right amount of spice and sweet and was really good...and I did a carb free dinner (which is unusual for me).  But don't be to proud of me - I took Addi out for a soft serve ice cream cone after dinner :)

  3. Yummy, looks delish! Where does one find raspberry chipotle sauce? I used to buy one from Costco but I haven't seen it around in a while...
